Avocado Fries

Looking for an easy snack? Want avocado but can't wait for it to ripen all the way? Look no further than avocado fries. Perfect for one large snack or for two appetizers.

  • 1 large semi-ripe avocado
  • 1 egg
  • 3/4 cup all-purpose flour
  • 1 1/2 cup panko bread crumbs
  • 1 tsp salt
  • 1 tsp pepper


  • Preheat oven to 400 degrees - while oven preheats set up a station with two small plates, a small bowl and a cutting board. 
  • Flour goes on the first plate, lightly beat the egg in the small bowl, panko bread crumbs go on the last plate.
  • Prep a medium baking sheet with either a nonstick baking mat or foil sprayed with nonstick cooking spray.
  • Cut avocado in half, remove the pit, and use a large spoon to separate the avocado from the peel - be careful to scoop it out completely in tact, this shouldn't be hard if it's ripe enough.
  • Slice avocado halves into equal strips, you should get 6-8 from each half depending on the size of the avocado. Note that the first and last strips will be shorter but that is totally ok!
  • Dredge each avocado strip in flour, working one at a time, move from flour to the egg, then finally the panko ensuring the slice is fully covered each time.
  • Arrange each slice on the baking tray and pop into the over for about 15 minutes. Check on the "fries" halfway through flipping over so each side gets golden brown. 
  • Depending on the number and size of your fries, it could take a little longer to cook. Make sure you keep an eye on them and make sure they're getting golden and not burnt. 
  • Once done serve with your favorite dipping sauce!
