I’m sure you’ve stopped to smell the roses but have you ever stopped to taste them? Rose water is a staple in Middle Eastern pantries but not very common here in the United States. Which is too bad, because it’s an incredible floral flavor that tastes amazing in ice cream, cocktails, even marshmallows. But I’ve decided to try it in…waffles. Don’t ask me why, it seemed like a good idea.

Turns out it was – the rose water was heavy enough to taste but light enough that it didn’t scare off a pickier eater (looking at you Reed). I’ll be honest, you don’t get a heavy flavor from the pistachios in the waffles but chopping some up to sprinkle on top definitely gets the flavor across. Next time I may toast or even candy the chopped pistachios to add even more pizzaz.

My favorite topping for these waffles is my honey whipped feta – the salty, sweet, and floral make a pretty spectacular combination and I promise these are some of the most unique waffles you and your guests will ever try!

Pistachio Rose Waffles

While this is a classic flavor combination in Middle Eastern countries, rose water is not very common here in the States. This unique but simple breakfast dish is a low stakes way to try something new.
Course Breakfast, Brunch
Servings 6 small waffles

Ingredients
  

  • 1 1/4 cups all-purpose flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • 1/2 cup rose water
  • 3/4 cup water
  • 1/2 cup ground pistachios
  • 2 tbsp olive oil
  • 1 tsp vanilla paste

Instructions
 

  • Combine all ingredients in a medium-sized bowl and whisk until smooth
  • If you want pink waffles like mine, add a dash of all natural food coloring to your batter
  • Preheat your waffle iron and light spray with nonstick cooking spray
  • Prepare waffles according to your waffle maker's instructions and size – for example, my iron is much smaller so I only use about 2 tbsp of batter per waffle
  • Let cool slightly and serve with a scoop of honey whipped feta (recipe in notes) and a drizzle of honey – garnish with extra chopped pistachios
